Freezer Food Prep Day

A few months ago, my brother-in-law and his wife had a little baby (who has, unfortunately, had some health issues – all prayers would be greatly appreciated!).  Since they’ve been spending so much time in the hospital and have no time to shop or cook, we decided to make them a week of freezer meals.  As I puzzled over what I could concoct, I found great inspiration in asking my friends on Facebook what their “go-to” meals are!  After being overloaded with ideas, I finally settled on Chicken Enchiladas, Meatballs, and Lasagna, adapting recipes I found on AllRecipes.  I thought I would share the recipes with my readers, in case you’re looking for inexpensive and simple freezer meals (and, were wondering what I was doing these last few days!)

:: Meatballs ::
1 pound of ground beef
1 cup of bread crumbs
1 tablespoon basil
1 tablespoon Parmesan cheese
1/4 teaspoon black pepper
1/8 teaspoon minced garlic
1 tablespoon oil (I prefer olive or sesame oil)
1 egg, beaten
Preparation: Mix all the ingredients in a large bowl, and form 12-14 balls.  (I doubled the recipe to make enough for 3 dinners.)  Bake the meatballs at 350 degrees for 20-25 minutes, turning once.  Allow the meatballs to cool for approximately 15 minutes, then place in Ziploc bags and stick them in the freezer.  Make sure you don’t leave the meatballs out too long, or they dry out! :)

:: Chicken Enchiladas ::
4 skinless, boneless chicken breasts
1 onion, diced
1/2 pint sour cream
1 tablespoon Italian spices
1/2 teaspoon ground black pepper
1/2 teaspoon salt
1 jar of tomato sauce
1 tablespoon minced garlic
12 flour tortillas
1 jar of enchilada sauce
1 cup of cheddar cheese
Preparation: Pan fry the chicken breasts (approximately 7 minutes on each side).  Once they are cooked, shred the chicken, and put it back in the pot.  Add the onion, sour cream, spices, tomato sauce, and garlic to the chicken and stir until heated through.  (Make sure to stir frequently so it doesn’t stick.)  Arrange even amounts in the tortillas and roll them up.  I went ahead and froze the enchiladas in an aluminum pan covered with foil.  When you are ready to eat them, just take them out of the freezer, pour some enchilada sauce on them, sprinkle with cheese, and bake at 350 degrees for 30 minutes.

:: Amazing Lasagna ::
1 pound sweet Italian sausage
1 pound lean ground beef
1 minced onion
1 tablespoon minced garlic
1-28 oz can crushed tomatoes (preferably with Italian seasoning or basil)
2- 6 oz cans of tomato paste
2-6.5 oz cans of tomato sauce
2 teaspoons Italian seasoning
12 lasagna noodles
16 ounces ricotta cheese
1 egg
1 pound mozzarella cheese, sliced
1 cup grated Parmesan cheese
Preparation: In a large pot, brown sausage, hamburger, onion, and garlic together.  Add crushed tomatoes, tomato paste, tomato sauce, and spices and simmer mixture on low for two hours.  In the meantime, you can cook lasagna noodles (I never do and they come out perfect!) and mix ricotta cheese with the egg.  Then, spread 1 1/2 cups of meat sauce in the bottom of a 9×13 inch baking dish. Arrange 6 noodles lengthwise over meat sauce. Spread with one half of the ricotta cheese mixture. Top with a third of mozzarella cheese slices. Spoon 1 1/2 cups meat sauce over mozzarella, and sprinkle with 1/4 cup Parmesan cheese. Repeat layers, and top with remaining mozzarella and Parmesan cheese. Cover with foil: to prevent sticking, either spray foil with cooking spray, or make sure the foil does not touch the cheese.  Bake at 375 for 25 minutes. Remove foil, and bake an additional 25 minutes.  I let the lasagna cool down, then stuck the pans in the freezer.  That way, my brother-in-law can decide when he wants to eat it, pull it out, and stick it in the oven for 15-20 minutes to warm it up.

Most of these websites have more than the coupons listed.  But, many of the items either Harris Teeter doesn’t carry or the price is exorbitant.  However, you might be interested in grabbing the coupon and seeing if your store has a clearanced or mark-down section.  With Super Doubles this week, you might be able to score some great deals on unadvertised sales.  I usually try to play it safe, since it pains me to waste my printer ink. :)   I will try to add to this list tomorrow – if you all know of any great organic coupons that I haven’t listed, please leave a comment!

Bzz Agent: Smart Easy Spring Cleaning

My SC Johnson Cleaning Kit came at the perfect time!  After moving into our new apartment last month, it seems like every spare moment is spent cleaning, unpacking, and organizing.  My package of goodies that included Glade fragrances, Pledge Lemon Clean, Scrubbing Bubbles Mega Shower Foamer, and Scrubbing Bubbles Toilet Cleaning Gel, definitely helped expedite my Spring cleaning.

Scrubbing Bubbles was always one of my favorite products, even before my kit came.  But, I was amazed at how well the newly developed Mega Shower Foamer worked!  It reduces mildew (this is great for people with allergies like moi!), removes soap scum, features a wide spray, and leaves your shower shining.  Their Toilet Cleaning Gel is also terrific for those of you who (like me) hate cleaning the bathroom.  You leave a gel disc below the toilet rim, and each flush allows a release of cleaning solution.  It’s simple and fast!  Even my husband, who generally hates toilet tablets because they eat through the rubber sealing rings in our toilet, approves of these discs!

The Pledge Lemon Clean was a great help in cleaning our bookshelves and the granite surrounding our new fireplace.  I love that it removes up to 90% of allergens, as I quickly wipe up dust!  It’s one of those “must-needs” in every cleaning closet!  And, of course, the Glade Limited Edition Spring Collection leaves your home smelling beautiful.  Need a jumpstart to your Spring cleaning?  Make sure to check out all the wonderful products that SC Johnson offers!
