I love summertime – not only is it warm but there is also a bountiful supply of fruit! I stock up on peaches, nectarines, and all sorts of yummy produce. Last month, I even purchased a bushel of fresh peaches and worked for hours to freeze them. That way, when we want smoothies or a peach pie during the winter, I won’t have to spend an astronomic amount of money. 🙂 At least, that’s what I kept telling myself as I slaved away in the kitchen! In the mist of my peach extravaganza, I had to contribute a dessert to a party, so I whipped up a peach crumble. It was really easy to make – and the best part? Everyone raved over it!
Peach Crumble Recipe
:: 8 Large Peaches, Sliced
:: 1 Tablespoon of Pumpkin Pie Spice or Cinnamon
:: 3 Tablespoons of Flour
:: 1/3 Cup of Honey (or Brown Sugar)
:: 1/2 Cup of Butter
:: 2 Cups of Flour
:: 2 Blocks of Butter (1 Cup)
:: 1 Tablespoon of Sugar (Optional)
:: 6-8 Tablespoons of Half and Half (or Water)
Preheat oven to 350 degrees. In a bowl, combine peaches, spices, and flour. Pour mixture into a greased 9X13 pan. On your stovetop, melt butter and add honey (or brown sugar). Stir continuously until mixture boils and begins to caramelize. Pour over your peach mixture. In a separate bowl, combine flour, softened butter, and sugar. Mix with your hands then gradually add milk (or water) until the dough becomes sticky. Be careful not to over mix! Evenly drop handfuls of the crust over the peaches. Place the pan in the oven for 45 minutes or until the top begins to brown. Serve immediately – preferably with peach ice cream!
